Crockpot Thursday

I saw that Mrs. T had Crockpot Thursday today and I decided to join her. I use my crockpot all of the time and have many simple recipes that I make in it. Every Sunday after church, we have a fellowship meal, and my crockpot has been invaluable to me. I often adapt recipes for the crockpot because for me, it’s the easiest way to transport a meal and to keep it hot once I arrive. I hope you like this one, as it’s quite easy and a family favorite.

Mexican Tortilla Casserole
1 pkg. taco seasoning
1 can mild enchilada sauce (red)
1 pkg of tortillas (corn or flour will work)
2 lg. cans of refried beans
1 lb of ground meat
Cheddar cheese (I usually buy a big bag, and so I haven’t measured the cheese)

Brown ground meat and cook with taco seasoning following directions, then set aside. Cut tortillas into squares about 1 1/2 inches across (I use a pizza cutter for this). In crockpot, put in refried beans then a layer of tortillas. On top of that, put more beans, then meat, then enchilada sauce, then cheese. Continue layering until you have either run out of ingredients or filled your crockpot. Cover and cook on high for 2 hours, or until it is bubbly. This can easily be converted to an oven dish by using a casserole and baking at 350.
